« A Christmas in Provence » at the Café de la Paix!

We are pleased to present you our Christmas yule logs 2017!

The holiday season draws its inspiration from traditions carefully passed down from generation to generation. This year, the InterContinental Paris Le Grand and the Café de la Paix have chosen to highlight Provence and its thirteen desserts. This festive custom is said to date back to 1683 and this enduring tradition is especially celebrated as an abundance of sweets, thirteen in all. Walnuts, almonds, raisins and other Middle Eastern fruits enhance the myriad desserts, including the famous calissons of Aix-en-Provence. This tradition invites sweets, nuts, dried and fresh seasonal fruits to the table for yuletide celebrations...

Based on this regional custom, Laurent André – Executive Chef of the InterContinental Paris Le Grand, puts his own spin on the thirteen Provençal desserts, transforming them into in a duo of Christmas yule logs: savoury and sweet.

The savoury yule log…

This wreath is a delicious triptych of pure duck foie gras, apricot and fig confit. This subtle blend of flavours is enhanced with crushed pistachios and hazelnuts and an elegant cocoa topping. A perfectly balanced, mouth-watering delicacy.

The sweet yule log…

The Chef invites you to discover a typically Provençal iced wreath with its layer of light calisson mousse, soft biscuits with nuts and a mandarin confit marmalade filling. Sprinkled with crushed pistachios and clementine nougat, this dessert has a delightful sweet-tart taste, so typical of the South of France.
