Introducing our new Chef, Laurent André

The InterContinental Paris Le Grand is pleased to announce the arrival of Laurent André, our new Executive Chef starting October 3, 2016. This virtuoso has already made a name for himself in the culinary world. In fact, Laurent André cultivates his skills from a young age with one of the biggest names in French cuisine: Alain Chapel. Then another heavyweight, Alain Ducasse, takes him under his wing in the 1990s. Laurent André rises through the ranks to become Chef at the Louis XV restaurant in the Hôtel de Paris (Monaco), when Alain Ducasse offers him a new challenge: taking over La Grande Cascade in the Bois de Boulogne and adding a Michelin star to this Parisian institution. Together with Jean-Louis Nomicos, Laurent André accepts, and succeeds, in just one year.

By then, Laurent André hits his stride and sets out on an international career. He orchestrates the opening of the first Spoon at the Sanderson in London. In 2003, he sets his sights on Asia and opens a second Spoon at the Hong Kong InterContinental. His already successful career gains momentum when he is offered the position of Executive Chef for the whole hotel: Laurent André becomes responsible for six restaurants and 220 cooks. For six years, the young chef learns and masters the very special rules governing cuisine that must adapt to satisfy the wants and needs of international travellers, a cuisine that knows how to tweak the classics without losing the essentials, that never sacrifices quality but invites innovation and new influences to the table.

In 2009, Laurent André returns to his roots, seeking a new challenge that would allow him to combine his French culinary knowledge and the techniques and influences he has gleaned through his travels. He finds what he is looking for at the Royal Monceau where he works as Executive Chef until joining the Grand Hôtel.
