Brittany featured in the first regional showcase
This year, regional products and flavours will be enhancing the Café de la Paix experience. Every month, starting February 15, 2017, Chef Laurent André will be featuring a different region of France. A menu in 5 acts will present products meticulously selected by the Chef himself from local producers: “Behind each region we find a terroir, products, passionate people. That’s why I wanted to showcase them in our restaurant.”
This regional menu will be proposed from Monday to Saturday in addition to the traditional menu, and will also be served in a dedicated corner of the Sunday Brunch. For this first flavour journey, the Café de la Paix has set its sights on Brittany.
Products, tastes and typical dishes, this westernmost region of France will share all its secrets.
Seafood, of course, has a place of honour, including oysters and crab. The Chef has also selected a variety of vegetables that represent this colourful region, such as artichokes and “Paimpol” white beans.
Here is the dinner menu served from February 15 through March 15:
“PRAT AR KOUM” OYSTERS
Cream soup with crumbled Morbihan crab
LOBSTER AND “GUEMENE” ANDOUILLE
Fricassee of “Paimpol” white beans and salicornia
ROAST SUCKLING PIG
Candied with hard cider and served with Camus artichoke royale
KOUIGN AMANN CAKE
Coffee, tea or herb tea
